Blast Freezer
Hello to all,
My request is a simple one,
I may be asked to explain why it is preferable to blast freeze (-25c) freshly butchered meat as opposed to the tradition method of -20C.
What effect does either have on the meat?
What are the advantages/disadvantages of either method?
