Adande Commercial Fridge

I've got an issue with an Adande Commercial fridge, it's basically one large drawer. It's a control issue, if it's set for 3 degrees it's going to 7 and then cuts outs. The controller stops calling for cooling. The control system is made up of a main controller/pcb on the back which serves a controller/display on the front. In your experience which part is to blame here, could it even be the sensor?
The reason I ask is because the main controller on the back was replaced at the start of the year so its got me thinking that maybe the front display or probe could be to blame.
I also had this issue with a foster display fridge once but replaced all 3 parts.

I would say it's set up wrong in the parameters
