I think TJK that as Project Engineer you should have this information and capability already.
I would suggest that you contact a specialist to design the equipment for you and therefore prevent any design failures and heavy costs to yourselves and your reputation.
Major manufacturers publish their Btu requirements on their web sites. Look under technical information, case specifications etc. Some have quick reference tables too.

Sounds like someone bit off more than they can chew :D
I strongly suggest listening to Brian
But if you must do it then get all the case ratings (capacity and saturated suction temp) from whatever brand cases you intend to use, size the rooms yourself like normal rooms but allow for high usage.
And if you haven't sized rooms before then please refer to my second line. Have you ever sized pipework before? These programs help BUT you have to know what you are doing with them, as they say - no liability for misuse.
Coolpack (http://www.et.web.mek.dtu.dk/Coolpack/UK/download.html) is a really good design tool
Dircalc (http://www.danfoss.com/North_America/BusinessAreas/Refrigeration+and+Air+Conditioning/Product+Selection+Tools+Details/DIRcalc.htm) from danfoss will help with pipe sizing
Good luck and for a fee I will be happy to do your job for you :D
