Would it be possible to make a fridge with a small ac unit half stuck in an insulated box?

Wouldn't last long as the monooblock units aren't set up for it, with some modification ya might succeed.

The short answer is yes.

A fridge is a fridge is a fridge.
Some fridges cool people, some cool food and some freeze.
The principles are the same but the controls will difer.

Try it and if it works then hey well done if not then better luck next time.

A mono block is a window A/C, your average one that is, they are designed to have a high evap temp and high air flow, that cools the compressor along with the fan.

For a fridge, or what we'd consider one @ 4C you will need to change the expansion device, preferably a TXV, you'll need to take measures to ensure good compressor cooling, and you'll need to change the thermostat system to one in the right temp range.

For Good efficiency you'll all so want to split the evap to help retard the ingress of heat.
