Cattabriga Com 15

The small confectionery company I work for has recently purchased a Cattabriga Crem O Matic 15. However it hasn't got any information with it.
Does anyone have a user's manual or service manual or know of a website with one?

I have tried Cattabriga.com already but got that 'this model is very old and the related documents are not available anymore'. Which doesn't help at all.

Either that or it'll be a pen and paper tracing cables for a diagram.

Hopefully someone has something.
