This small icemaker makes thimble shaped ice. The machine does not cut out to initiate defrost until the ice thimbles have fused into one block. Assume the cut out /defrost probe that sits in the water tray is faulty (No wiring diagram ) Where can l get a probe

Defrost on ice machines starts on a timer or suction pressure\temp. I don't think its done by a probe.
water temp is near 0C most of the time.

i have 1 instruction manual for polar-and its the t316!!

only three things will cause that 1/ the ice thickness sensor 2 / the pcb is locked on cooling 3/ the water circulation pump is not working or the gauze is blocked with dirt not allowing water flow ifyou order a sensor order a bin motor and pcb you will need it in the next twelve months

The ambient temp is too cold for machine to work, so the ice fuses together.
Suggest moving to a warmer place. The ice machines [advert removed] do not work at less than 6C
