It is a straight case, full sight glass at all times, if it hadA faulty stat wouldn't we still see a uniform temp in the case?Has worked previously.

Is half of the evap coil iced up ?
when you say straight case? what type of freezer is it?
hot gas defrost? elec defrost?
is the case defrosting correctly?
defrost time seems short for 2 defrosts per day, what is the defrost term temp set to?

Air flow maybe
Can the air fully circulate the load, nothing stacked on the floor or against the wall

Are the brands of ICe Cream different from end to end. I have always seen that higher end ice cream is harder to freeze

Holding temp for ice cream is -20'C, storage temps between -29 and -26'C

cant agree there install minus 13 thats to soft for all our customers mate the problem set at minus 13 it aint cutting in untill minus 11 and it aint running long enough to ice the evap all the way thats why it may have such a temp diff in chamber set to minus 18 and let it settle most of the isa and framecs only df twice a day and the reason for high end ice cream requires more freezing is it useually contains more sugar or alcohol
