Having been in the commercial fridge industry for years and seen all types of trade people steal work from under our noses have any of you guys moved in to the complete commercial kitchen environment and taken on these catering company bandits and beat them at there own game?????????????????

Something i would love to get into if i knew anything about it.
It does p me off that the catering co's now swallow up a lot of the commercial fridge work and sub it out.Seems to be a case of lazy managers etc just wanting to contact 1 number for everything from a combi to a chiller.
Plus the co's we subby for charge in excess of £60ph plus a call out fee.We supply parts at our normal rates and they think of a number, double it, and add it onto our bill.
I wish it could go back to how it was a couple of hundred years ago , when the catering companies looked after the hot stuff and washers and we looked after the cold.( I am turning into a grumpy old man)

Sounds like you gave some very good advise and they ran with the ball and is doing rather well, and "YES" maybe you should have taken your own advise.:D, but hind site is always 20/20.
