I know how to perform a pressure test however what would you do differently if you had 3 pipes with 2 connections to test is this possible?

If only two pipes have test points and the three pipes aren't interconnected then you have a problem.

If, however, you are asking about a three pipe VRV/VRF then you need to read the installation manual which will explain how to get all of the control valves open if someone has already powered up the system.
