CA storage of any product is a complex matter and settings are very dependant on the varietal of the product, apples to be soted and the length of storage requried. There are also some significant safety hazards with CA storage due to the ultra low Oxygen levels that must be maintained. In some cases with apples as low as 2% O2, 2%CO2 and 96% N2. At these levels life can only be sustained for seconds giving operators no time to react.

The basic components required are relatively simple, A nitorgen generation plant along with O2 , CO2 controls. The actual plant though is complex and you would need to contact a manufacturer such as BOC Air Products or Medal to design a system for the cold room you want.
