does anyone know what 'channelling' does in a transport refrigeration system or where I can get some information from. Also what is the stacking and racking storage method. Everyones help is appreciated so I can finish my assignment

I think "Channeling" is involved with making sure that there are airflow routes through the cargo.

This will ensure that all items are cooled, otherwise dead spots may go out of temperature.

For example if there is a blockage half way down a container with a front mounted evaporator then only the front half will be under temperature control.
