Please, I hope somebody can help me in following topic.
I need to dimension a blast chiller in order to cool some meat – beef - entering at 104F.
I need to freeze it at -4F.
This means I can realize an evaporation @ -22F, for example.
I can calculate the needed thermal load considering the meat characteristics.

My problem is as follows:
Which is the air temperature I need to consider at the blast chiller inlet ?
Is it 104F ?
I deem in this case the huge temperature difference will calculate a very small coil
Is it the final temperature I need to have in the room in order to get the -4F in the product ?
In this my concern is to over dimension the coil in this second case.
Please could somebody very kindly explain me how this calculation can be realized, or suggesting me any literature reference ?
Unfortunately I have seek in ASHRAE but I can’t find any direct reference to a similar case.
