    By adding moisture to the air.

    Isn't pastry kept covered?

    You can use all sorts of humidifiers, hot or cold or ultrasonic, as an add on or independent unit.

    A humidistat will be needed to control it.

    Install an evap reg valve to control high dew point in cabinet to reduce moisture removal.

    put a small tray of water in the case. old school but it works.

    Magoo is correct use an electronic EPR to keep your product humidity high at all times. They cost some money but pay for themselves with product quality improvement.
