simag ice machine fault

Would be grateful for any help. I went to look at a simag sc 120 ice machine the other day. Got their and found the left hand side of the evaporator iced up solid so only the right hand side dropping ice when on harvest. Defrosted and turned back on to test. Monitored harvest ice 4 times prior to departure. Checked both water pumps and hot gas valve. Attempted to adjust ice thickness stat but no real difference to size of ice when adjusted. Monitored defrost timer for movement. Did find water inlet into top of machine not even bit enough to fill reservoir not sure if this has an affect on defrost. Suspect their could be an issue with the ice stat. When I arrived on site the bin was full and off on bin stat so don't presume a fault with that stat. I've tried but can't find any tech help for simag. Any help with this would be much appreciated. Cheers
