fresh grind meat blast freezer
Hi friends I'm working with catering co.now dayz they are looking for a blast freezer fresh meat (cubs or grind)here is some information please advise me the best machine capacity needed in kw to meet the load.
freezing room size internal vol 3000 x 3000 x 3000
wall thickness 170mm (polyurethane)
total meat load 2000kG
in temp +15
out temp -20
evaporation temp -27
total time 1hr
humidity 60 %
i knew it is very sophisticated calculations but i hope that you guys can help me sort out.

How is the meat arranged? open trays? packacked? in closed boxes?
17mm walls? i hope you have missed the '0'.
Please have a look in the web sites of blast freezer evaporators manufacturers such as LU-VE, ALFA-LAVAL or others to find the right size and capacity. For control I use Dixell XB570.

17mm wall thicknes of the freezer panels,
means meat in open trys cover with polythyen 9trys/trolly.
what is "o"will you explain please ?
actually im seeking heat load in (tr or kw )to select the evaporators & condessing units.

I think that 17 mm is not enought for freezer walls, 17cm is ok.
I dont design loads, for that you need design engineer.

Dont know if you found any help with this
1 hr pull down time is far too ambitious ( as you would need about 215 kw of refrigeration )
Have you got a more realistic pull down time?
If its, lets say a pull down time of 24 hrs. you would need approx 12 kw of refrigeration
