Cooling tunnels
Good morning all
I am looking for info on cooling tunnels in the food industry more specific for Bread and on the humidity

Looks like no one replying, don't know much but was wondering what you mean by humidity? Are you cooling freshly baked bread and if so are you worried about maintaining/removing the humidity (i really mean moisture content) in the bread? Or are you worried about the humidity from the bread affecting the fridge system? ie what humidity do you want info on and why. Sorry just wondering.
