    killing salmonella in almonds chilling



    Hard to find anything on this but would like any direction blast cooling or blast freezing almonds to kill solmonella verses Irradiation also known as cold pasteurization.

    Any help would be welcomed

    I'm not in the business of cold pasteurisation, but here's a quick quote from ASHRAE refrigeration handbook (2006):
    "Freezing is also an effective means of microbial control. Limited
    death may occur during freezing, especially during slow freezing of
    gram-negative bacteria. However, freezing is not a reliable way to
    kill microorganisms. Because no microbial growth occurs in frozen
    foods, as long as a product remains well below its freezing point,
    microbial safety issues are nonexistent. Frozen foods must be stored
    below −18°C for legal and quality reasons.
    In fact, Salmonella is a gram-negative bacterium, therefore freezing is apparently not the way to go to kill it.

    just decided to stop eating almonds,sreiously tho surely chemically,be sure to scrub up when leaving that enviroment!how do you know its there,public health issue looming me thinks

    Salmonella is generally associted with chicken, a really good food poisoning bug, particually over summer. Great way to loose weight solong as you don't die in the process. Really uncool if selling to general public. Happened here when a pregnant woman aborted, sued everyone envolved.
    Listeria is a similar bug around in summer, very hard to get rid of. Campo is a real killer, fesis related generally water delivered.
    Freezing usually only makes them dormant. Cooking for long periods will kill it. No guarantee though. The real problem is handling issues and personal hygiene, toilet training staff, hand washing etc.,
