Thermal properties for guts
Hi Guys,
Everytime I need to calculate the fast cooling (from +38șC to +4șC) of guts and other subproducts (animal organs) of animals I use to assume certain values.
Can any of you have the following information for pig offals:
- Generic sensible specific heat (kJ/kgK) for the range +38șC » +4șC
- Thermal conductivity (W/mK)
- Density (kg/m3)

However this kind of information I already have it from other sources. I really do need the real properties (specific heat and thermal conductivity) for the offals.

We too have seen this problem of getting accurate data. We use the worst case of meat products to be on the safer side.
