    Chocolate display fridge

I am trying to turn a normal refrigerated display cabinet into a chocolate display cabinet. (humidity controlled as well as temperature). I am having some trouble controlling the humidity in the cabinet. I need it to be between 40% and 60% RH. The humidity rises too fast once the compressor stops. Is there anything I can try that may stop this from happening?

    Hi danpitcher

You are asking too much from a standard refrigerator.

For humidity and temperature control look at the AHU equipment needed for buildings?

If you are going the whole hog you would need a hot and cold matrix aswel as humidity generation and the associated controls to go with it.

Look to air condition the room as this will help reduce the moisture ingress to the cabinet.

    Good luck!

    Sturt.

Had to repair one recently. Compressor runs continuously, heating element cuts in & out on thermostat to maintain temperature
