For a chiller water application Howden state oil pressure to be 200 kPa over discharge and fault at 100 kPa over discharge. Would there be any detriment to the compressor if the oil pressure was run at 300kPa over discharge?

No problem, max gas oil diff as recommended by Howden is 500 kPa.

the temperature of oil also viscosity of that effect to that difference
High temp low difference and
high viscosity high difference (but should be in manufacture recommended compressor rang )
