We are told this will give us more cooling power.

If you have 100 kW you can count about 150 kW, depending on the regime the compressors are working on.
Pay attention to the compressor motors and the condenser (with R507 there will be more needs of that elements).
We are going to mount a cooling pump with larger flow.
Is the motor going to use more amps ?
(is this due to higher pressure or what)
What motor you are talking about? Compressor motor?
The motor if sized corectly for R134a will be too small for R507 due to the increased mass flow. If you are using a shell and tube condenser it may still not be suitable even with increased pump flow and may also need changing. If you are using medium temperature you are better to stick with R134a and upgrade the plant. You may also find R507 hard to obtain in some ports.
