Hello, I have an General Electrics side by side Freezer/Fridge. On the Evaporator there are two (2) defrosting thermostats in series with the defrosting heating coil. Can anyone enlighten me why there are two of them?

In case 1 defrost termination breaks, you will not melt the plastic around the evap. Maybe GE had a problem with that and add an extra 50 cent part.

The second defrost sensor you mention is probably the thermal fuse. It is wired in series to protect the cabinet against damage from the heater. If the defrost sensor fails then the thermal fuse will cut power to the heater. Normally operates at a temperature between +72 and +84C.
