View Full Version : Cold Store Guidelines
Hi everybody,
I am looking for a standard or a guideline for cold store arrangements. I could not find anything in my references and I am not sure if they exist:confused: .
What I am looking for is a guideline which states how to arrange the rooms i.e. fruit stores at what level, or can meat stores be placed near fruit rooms? or something like this.
Any help would be appreciated.

I think every country has his own rules for this.
If I see how they sell fish on the market in Turkey and Spain..??:eek:
Here in Europe - and I suppose also the rest of the world - we have also the HACCP guidelines.
Belgium has his own laws concerning temperatures and storga.
Important is to avoid cross-contamination of the food.

Dear Lana,
Different products for storage in Cold Storages have their own specific requirements. For example if we are storing fresh fruit after post harvest, then we have to precool the same, grade and pack and then store them in Cold Stores. Now with meat or fish the requirement is different. Here we generally blast freeze the product after cleaning and then store it.
In the event there are going to be one area with seperate rooms for storage of different products, then we have to ensure that there are no contaminations.
The general layout of the storage areas and others have to be prepared so that the products could be handled easily.
Should you require any further details, you are free to write and I shall try my best to guide you. We are very much in the designing and setting up of Cold Storages for various perishable products.

Actually I do the same as you described.
I have a project and I would like to include some kind of document or reference to back my design.
It is a very simple situation. A few meat cold stores and a couple of fruits.
So there is nothing complicated just I thought to include something if I could find it.

Hi lana, there are a few major distribution centres here. I would expect that these people would have the best information in this field.
I see a talk from a distrubution manager coming up and will ask the question. If anything comes out of it, I will post the info for all.

Hi Lana,
I am sorry but I just could not locate any documents which would be suitable to you and you may convince your client. However as per my experience and the installation of similar Cold Storages we have executed so far, the following should be noted.
Every product has a different storage temperatures depending on the storage period. You cannot store different products in the same room. You may have a large Ante Room from where there could be entrances to the different storage areas. But you have to have a very high degree of hygenic conditions.
You may refer to Ashrae System Handbook, where there might be something which may interest you.
In any case I am still looking for some documents which might be of interest to you. However if you could be more specific about your project, I may be able to assist you.

Here in Belgium, they particularly are looking for cross contamination which means that an incoming product may never cross an outgoing product.
So the corridor where the meat enters the factory may never be used to load the meat again in the trucks.
There must be a flow of the fresh goods and this flow may never cross a previous flow.
It's also not allowed to brake the cold chain. Once something is cooled, it must be kept cooled within the given specs.
This is even true in restaurants, the plates with the meals must be served along a different way then the dirt plates going back to the kitchen to clean these.
There must in theory even two doors on a kitchen for outgoing and ingoing plates.
The rinsing and cleaning of the dirt plates must be done in a separate place/corner of the kitchen.

Does anyone have exact guidelines for temperatures that different products should be stored at. Also exact temperatures for killing bacteria.
I have a school text "principles of refrigeration" which has a chart in it showing storage temp for milk, and the effect on storing it at different temperatures on the reproduction rate of naturally occuring bacteria.
Does anyone have similar information for other products?

Makanic you have provided very good information which should be of use to Lana. The last E page has the dimensions mentioned, that should give an idea as to the sizes of the Cold Room

Samarjit, I would suggest you not post your email address in the public forums to prevent spammers from getting it. If you use the private messaging system to start the communications, you can then exchange emails with others privately.
There is also another book written by Mr. Dincer called Heat Transfer in Food Cooling Applications. It has been a while since I have opened it, but it does have a lot of very good information too.
Makanic, Can you go back and delete your trial posts please? It looks like you were trying to figure out how the system worked. No problem with that however, but it would help if you could tidy up a bit.

You must have gone through the book Heat Transfer in Food Cooling Appications by Ibrahim Dincer. I would like to know as to how you asses the book and if there are any information on Controlled Atmosphere technology there.

Chapter 2.6 covers CA storage but it is only 5 pages.
Most of the book deals with calculating heat transfer from various foods under many different conditions. It is a very good book, which I have had for 8 years.
I would recommend it highly.

Depending on which version of Acrobat you have the methods may change slightly.
Basically what you want to do is print the page to Acrobat, instead of the printer. In the printer dialog box you can select what you want to use to print the page(s). In the older version this was called Acrobat Distiller. In the new version I think it says Adobe PDF.
What this does is take the screen data and put it into a PDF.
That's all there is to it.;)

That is the difficult part. I can select each page and copy it to Word, as I do most of the times. But this book has a lot of pages.

Just open section by section and then use Acrobat Distiller or Adobe PDF (as suggested by US Iceman) and print them one by one.

There are times when we have to read and learn lessons because we have to get diploma and start to do our job making our daily bread;)
Then came girls, wife, kids and no time to read, but again teaching them to become good people. maybe something to read to improve your own skills. Here you are now...:D
And finally came times when you can read for your own pleasure and to improve some skills too, thanks to web sites...I am at the entrance, but still a lot of work;) and no too much time for reading, pity:D

I could not agree more.
After the working hours (when I still read a lot), you feel guilty to spent the family time for reading; but you need that time too. Sometimes it is possible and sometimes it is not. The family has the right.
You always thinking about the material you haven't read.
It is an ongoing dilemma.

I believe if you open one of the chapters in those books and then do the PDF printing, it should pick up the whole chapter as a separate file.
At least that is it what it appeared to be. From past experience, if the document is more than 1 page Acrobat will include the whole document in the single file.
Reading and education do not stop just because you graduate from school. Life is education and sometime that hurts more than a simple reading assignment!:D

Cold storing is a little " complex" depending on the comodity, volume ( quantity ), receiving temperature, storage period, etc.

What I was looking for was a reference for arranging cold stores in a single plant, i.e. if the plant includes fruit and meat cold rooms then what are the points which must be considered. For example separate inlet and outlet doors for product delivery, put fruit cold stores on one floor and the meat on the other,...
What other experts told me and also I searched there is no general standard and every country has its own regulations.
Actually this is very simple and common sense really but I would like to know if there was a written rule out there.

I was going through the Book Cold and Chilled Storage Technology , second edition, edited by Clive V.J. Dellino. There is a part a chapter The Cold Storage Chain by M. Young. There is some information given on the Cold Storage Layout. I have the hard copy of the Book. In case you have the Book, which I am sure you must be then it is fine, otherwise I shall have the relevant pages scaned and mailed to you. But this will take some time.
