In my service area, one rarely sees a "refrigerated pie case". Last time I worked on one, it was 15+ yrs ago. Other than the merchandizing aspect of the case, is there any special consideration given to the refrigeration system with regards to Temperature and Humidity..???

No not really.
Pies tend to be in the deli section with mixed meats and
other products, also pies are pastry crusts so the different
materials combined just need treating as a deli case.
Loose raw meats dry out if the case has too large a temperature
difference over the coil, but loose cooked meats in a pie crust
would react differently.
Just store at normal deli case temperature and follow food
manufacturers stated guidelines.

easiest way is to check the wiring diagram - if theres no humidi stat then no
