problem with brema ice machine

hi guys im having a problem with a brema cb416a-q ice maker, went on site to fit an evap stat, installed stat like for like but whats happening now is that during the refrigeration cycle the water inlet valve is being energized and when the stat opens at temp to activate a harvest the water inlet is being de energized, whats happening is im getting either really poor ice if stat turned down or if stat is turned up then evap if forming one large block of ice as machine relies on water along with hot gas during harvest. The water inlet valve is supplied from a cams timer, would really appreciate any advise on this. I was going to order a new cams timer but have never really came across a brema before. Thanks
