Can someone help me sizing a system for chilling food product. I normally work in the process heating side not refrigeration.
I'm looking to chill sliced Onions loaded on trays from 100C to 5C in 90mins, the product is on trays supported on wheeled racks. Product weight is 768Kg and tray and rack weight total is 350Kg what size Air blast and main chiller unit would i need to achieve this.
I would appreciate it if anybody can help or point me in the right direction so i can learn about the art of refrigeration.
