Does any one knows reliable software to calculate chilling times of cattle and pigs carcasses and weight loss?

For example giving parameters such: inlet temperature, average temperature outlet, air flow per carcass, etc...

and I would like to get: time need, surface carcass temperature, core carcass temperature, weight loss.

Probably is very difficult to get this tool...but no difficult to try it.

Hi Sandro
I do not know of the software specifically for carcasses, what you are after appears to very complex and would not be freely available. You could go back to longhand methods.

Technisolve software does do meat calculations in its coldroom calculator but you are after weight loss etc.

Some papers on rapid cooling have been written to reduce weight loss.
