DIY Large Refridgeration

I am trying to figure out some costs to build a large refrigerated building.

What I'm most curious about is the actual design of the building? I want to do R35-R38 to keep refrigeration costs down.

Anyway, here are my basic dumb questions:

Why do they do insulated panels as opposed to just straight insulation? Can I take an EPS foam block, some eps spray, and some liquid nails to create the shell (inside the shell of the building)?

Or why do they do the panels as opposed to a BATT insulation in the wall and blown insulation on top?

Should the ground be insulated? How much will I lose through that? I'm only looking to keep the building to 43F (in TX).

I'm got more but my brain is fried for today.

the secret is good insulation,fire safety oh and strength i have seen the results of chuck up jobs in a pile on the floor,and been called out to some that will not cool,and i just say you have a problem not me i have the solution.but you say you only want 40f whats the highest ambient whats the product etc its heat gain i would call a few specialists in to give you some quotes and take their advice before wasting your money.

Yeah I hadn't thought about it from a fire safety standpoint.

I've already talked to a few people and I need 2 5 hp units (roughly 100-120k btus to cool adequately to 43 degrees).

I'm just curious about the actual design of a building like this. What are the nuts and bolts so to speak?
