the carpigiani refrigeration wise is fairly basic, header tank and barrel circuits. Setting up the hardo matic churn control is delicate. Hygiene is critical, machine should be stripped and cleaned daily, mix pumps etc., use lots of Taylor lub grease. Pre-mix should be stored and only added to header tank at +4.0 C
Go to the Carpigiani web site, they used to be user freindly. Local agents should be able supply all service info required.
