Has anyone ran into it here? I have three sites of the same customer that has cold in the coolers. We can clean it up and in a couple of weeks we have signs of it again. This is showing up on all the shelves, walls and refrigeration equipment. The customer cleans everything but the refrigeration equipment which we do.

1. What causes this.
2. What can be done to prevent it in the future?
3. Yearly PM's are done, can we do something then?

What is the temp inside? Humidity?

the temp is 38 deg F. As for the humidity not sure.

Are the coolers enclosed or open type? What is stored in the coolers? Is the product wrapped?

Walk in Coolers in a conveniences store with 19 reach in doors. Is this something where the store has had to high of humidity and now that mold started it is tough to stop? Or is our TD to low in the box?

Mould spores can be carried on the wind. Every time the door opens more can enter.

Spores also live in very, very small places so a deep clean may be required to get rid of the infestation.

Also check for any product debris allowed to fall into the units.

Are the drains clean and trapped properly?

A bakery we used to look after had a specialist company come in with a misting machine to sanitize the coldrooms and chilled production room.
