The expansion valve is a temperature initiated pressure operated device to regulate the flow of refrigerant through a coil. A phial sometimes called a bulb is mechanically attached to the suction outlet pipe and is both charged with the same refrigerant for which the system is being used and connected to a set of bellows [at the top of the valve] which in turn act upon the orifice [metering point].
If the temperature sensed by the phial is too cold or equally not cold enough the pressure within the loop from phial to bellows changes which in turn acts upon the orifice and thereby decreases or increases the volume of refrigerant flowing through the coil.

Superheat is simply the difference between the temperature of the refrigerant entering the coil and that leaving at the coil outlet. The reason for the differential being the heat picked up from the load during its passage across the coil face.
This is typically measured using a hand held thermometer.
