Hi
I am busy with freezer room for fish
It should hold 15 ton in approximate 30 kg boxes
what guides should I follow to determine the proper phisical dimensions?

15000/30 = 500 boxes
500 to be stored in racks, pallets + free space above and around the pallets/racks for proper air circulation.

5 m x 5 m x 4 (height) m it will be enough.

most important you forgot to tell us: are the goods already frozen when entering the freezer room?

Yes the fish are frozen when entering
Where can I find guides on the shelving arrangement etc.?

Use the good sense.
1) Don't block the air circulation between the stacks of fish boxes;
2) Load only until underneath the aircooler so no air will be blocked
3) Let a space between the walls and the shelves so the cold air can pass through.
