K40 ice machine make ice no probs , wont cut off on thickness stat ,have tried new manufactrures own stats x 2 now , but no change ???

There are four or so maunals you can download.
Looks like it could be the hot gas valve, micro switch or water inlet valve open circuit.

is the switch switching??
Im with "monkey spanners", check the hot gas defrost valve, check to see if it gets power from the switch when the ice should be defrosting, I would say you have a faulty hot gas solenoid or valve.
