Has everyone got a reason not to use one of these containers (after insulating it) for a freezer box? and suggestions how to set it up. or anyone doing it.

Sea containers are badly insulated. Only 75 mm polyurethane.

If you want to use it as a freezer, I recommend you to increase the insulation by an extra cover of 75 plates.

If you are thinking of using the steel ones, then building a proper freezer using insulated panels is cheaper and better.

yes done a few dry containers, lined out with panels,6 inch put slab doors heater strip/door heater, they are a bit tight for evap, heater replacement would mean removing coil ,fit new equipment everytime make sure you user a container in good condition you do not want water ingress.
