Hello there! I want to ask if you can help me with regards to the usual storage temperature for bakery and pastry chiller rooms and its relative humidity. I tried to search thru the internet but I did not find a definite answer. Thanks!

Do you mean a chiller for prepared dough (a dough retarder). Or is this for finished products (bread rolls, pies etc)

2 deg.C 75-80% humidity will probably cover it
