mature guy looking for advise on apprenticeship in ireland

hi just wondering if anyone can give me some advise on how or if it would be possible to become an engineer at my age 39. i served my time years ago as a bakery ovens engineer but that is no more. i want to try refridgeration eng now and wonder if anyone has any advise on how to get into it, and if there is any apprenticeships going for an ol fella!!!! thanks paul
