What's the best way to shut down and prepare a commercial ice maker for storage.

Is this desirable?
Are there risks associated with not using these machines for periods of time?
Would you in your opinion shut off and not use an ice maker or would you allow it to keep full durring long (3 month) periods of little or no use?

Hoshizaki KM-2000S3 is a common model we use.

I'm asking, because several of our sites have multiple machines, and when business decreases, the question was asked if it would save energy to shut these units off 2 to 3 months as needed.

I would have thought that you should be able to shut the machines down without problem.

Make sure that the water ways are clear and clean, descale first perhaps. Drain all water from machine, keep air gaps around any doors/flaps to aid ventilation.

would you foresee any problems with compressor, condensor, or refrig system seals or whatnot?

If you want to shut off your ice maker always disconnect the ice maker if you do not use it and always remove the leftover ice cubes. The important is you know how to maintain the cleanliness and proper use of it. In order to avoid the risks or problems in future.
