Met a rather interesting Engineer the other day.
Who told me that whilst on holiday in the U.S of A.
Florida I think?
Wherever they fired the Saturn Rockets from?
He was shown around and apparently ringing one of the huge concrete silo's was York Compressors.
When he asked what they were for, he was told that they.
Were used to provide chilled water which was fed into the rockets firing pit.
To provide a thermal barrier between the flames from the rocket and the concrete containing them!!

Anyone who has accidentally applied a heat source to a concrete surface would understand!

Basically any moisture within the Concrete turns to steam and expands.
which breaks of shards of concrete from the affected area.
So the Saturn rocket would be taking off with supersonic shards of concrete shooting up into it.

Apparently the white plums of smoke you see is not smoke.
It is steam from the boiling water.

Well it was a new one on me!
