Where is the best place to put a remote sensor? As in how far up the wall? Is it the same height as a room thermostat for central heating?

A remote sensor for what? Their location can be determined by function...

its for an air conditioning unit in my lounge and bedroom. The return air sensor currently located at floor level (low wall convertible unit) and not sensing correct room temp at mo due to being installed near a window bay.

Since it's for temperature you want the sensor located in an area away from air drafts, windows, and at a height where people will occupy the space. So yes, a similar location as a room thermostat for heating.

Is it better to have it at seat level or shoulder height?
