We have been asked to quote a VRV III and 'do' a choke test on the pipes. Now in all honesty I don't think we have ever done one or been asked. Has anyone else been and if so is it just a blast with nitrogen or is it more detailed.

Never heard that term used in that connection.
Why not play daft and ask what they mean by a choke test.

A choke test seems to refer to blocked capillaries where they have been brazed into other components.

The test would involve blowing nitrogen through the particular section.

Whether they mean the larger pipe sizes or not ......

But to be safe I would suggest doing as Argus suggests and asking the question of them as the task could be a bit open ended (sic).
