How many air changes?????

Hi can any one help me with this?

I'm putting in a couple of split units for a friend in his bookshop which is going to have a coffee shop put in, the front of the shop will have an open serving hatch onto the street, i'm using ACcalc to size it up and wondered how many air changes i should allow??

Any suggestions please?
