What are the criteria for making cold store suitable for onion. Is there any special equipment to reduce humidity.

Onions - Dry:
Recommended storage at 32 F
65/75 RH = 20/15 TD across the evap = 17/12 SST.
Storage life: 1 - 8 months

Onions - Green:
Recommended storage at 32 F
95% RH = 7 TD across the evap = 25 SST.
Storage life: 3 - 4 weeks

Yes you can without other equipment. We do it all the time, beer/wine storage or some convenience stores for example.

One important factor is that you have a quality walk in box designed for your local conditions. Good insulation, vapor barrier, no air leaks etc. And, have properly designed refrigeration equipment.
