What is usually the problems at hand when you hear that boiling/steaming sound coming from the evaporator coil? And I dont mean the normal volume of it, because you usually hear a little bit of noise of the gas expanding, but I mean when it becomes loud enough, you can hear it over the indoor fan.

What is it that you are talking about?
Cold room, domestic fridge....?

I suspect you are talking about a domestic fridge and would also guess that the condenser is over heating.
Clean the fluff off it or move it away from the wall to get better air circulation.
